Avocado toast on rye bread for healthy Wednesday

Avocado toast has been my favourite breakfast for a while now so I came up with this healthy version so I can have it most of the days without overstuffing on carbs.

All you need is:

  • 2 slices of rye or grain bread
  • 1 avocado
  • 1 egg
  • olive oil
  • salt for seasoning
  • chilli flakes
  • 1 lime
  • 1 fresh pepper

If you can try to get organic ingredients, especially the eggs, as they contain less carcinogenic ingredients and are more nutritious for the body.

Put the egg to boil to your liking, 6 min for semi-hard and 10 for very hard. I like hard boil egg, although poached will go nicely too. Eggs are one of the rare superfood. Previously the eggs were considered to give high cholesterol but it has been found that eggs are very beneficial for health. They are full of healthy, meatless protein which makes them good even for vegetarians. They are low on saturated fat and high on unsaturated fat which helps to keep cell membrane healthy.

Slice the avocado in half, peel it and remove the seed. Chop it into smallest pieces possible but don’t mash it. Small chunks are healthier than mash because chewing wakes up the metabolism. Do the same with the pepper. Avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals.

Drizzle it with the olive oil, sprinkle with some salt, rainbow pepper and chilli flakes.

 

I recently bought this bruschetta seasoning that contains all of the above, but you can go wrong if you stick to salt, pepper and chilli flakes. Simple, yet effective and tasty.

Squirt some lime onto pepper and avocado and mix it all together. Lime will give it nice sour touch. 

At the end spread it on the previously toasted rye bread and add sliced egg on the top. I like a bit of lettuce salad with it, but its good without it too.
